Tangy is the first word that comes to mind when this salsa hits your tongue. Mateo's has found a balance with this particular salsa of tartness paired with just enough heat to activate the tastebuds after each bite. Although this is labeled "hot", it's not particularly spicy - mostly a tongue sizzle every now and then. Although, a lot of that might just be due to how truly sour this stuff is. It's still a solid choice for putting on veggie tacos or scooping up with chips. I wouldn't hesitate to put it on breakfast tacos but that amount of tanginess might be a bit much for your first meal of the day.

Taking a look at the ingredients, it makes sense why this salsa is particularly acidic. Red wine vinegar is listed before lemon juice concentrate. I tend to prefer salsas on the tangy side but this is actually pretty heavily on the sour end of the spectrum. Jalapeños are listed as the second ingredient and habaneros as the last. I would have preferred a bit more heat to balance out the sourness, especially given this is the "hot" variety of this salsa. Mateo's has an "Extra Hot Habanero" variety of their salsa, which based on the name alone seems like a large jump in spiciness. I'm now much more curious to try this habanero salsa...
